Aloo Baingan is a traditional vegetable dish enjoyed by the people of South East Asia (Pakistan and India). Aloo Baingan is a combination of Vitamin C enriched potatoes (local name Aloo) and brinjal (local name Baingan). This combination of potatoes and brinjal when cooked together with the addition of several spices, it becomes a mouth watering and delicious Aloo Baingan vegetable curry. This is enjoyed by people alongwith chapati and can be enjoyed with naan.

- Potatoes

- Water
- Cooking Oil
- Tomato
- Salt
- Red Chili Powder

Cooking Steps For Aloo Baingan
A step by step cooking process for making a mouth watering Aloo Baingan Curry is as follow:
- Cooking of every dish requires proper washing of the raw materials and in case of Aloo Baingan , both Potatoes and Brinjals are washed carefully to remove any apparent dust particle.
- Take half cup of cooking oil in a pan and put up the flame on a high frequency.
- Take 2 medium sized onions and chop them. Remember chopping of onions will help to cook them easily despite of other ways of adding onions.
- On heating up the oil, add the chopped onions into the pan.
- Add a large sized red tomato after chopping it into fine pieces.
- Addition of ginger and garlic paste is not required for Aloo Baingan recipe. Their addition will not properly allow the taste and aroma of potatoes and brinjal to flourish properly.
- Add one teaspoon salt, one and half teaspoon red chili powder, and half teaspoon turmeric powder. Mix them properly.
- No other spices should be added in this recipe as the above spices are enough to make a delicious and mouth watering Aloo Baingan.
- Add half kg finally cut potatoes into the pan and cook them well on a high flame.
- While cooking if you feel that the curry is getting dry, you can add water to avoid dryness of the curry.
- After 4-5 minutes, add half cup of water and put the mixture on steam by keeping the lid on the pan.
- This steam process should be done for 4-5 minutes.
- Add 750g of finally cut brinjals into a mixture containing potatoes, onions, tomato and other spices.
- Now put the lid on the pan for 8-10 minutes to create a steam and cook the brinjals in this steam.
- After 8-10 minutes you will see the brinjals are fully cooked in their own water.
- The brinjals are now soft like button.
- Add finally cut green chilies, garlic pieces and green coriander to garnish this delicious curry.
- Remember garlic pieces added the last are for smell and not used as a spice.
