Step by Step Cooking Process of Reshmi Chicken Masala
To give chicken a shape of crispy and tasty Reshmi Chicken Masala with the help of different spices, we follow a series of cooking steps discussed below.
- First, priority is to wash all the ingredients well including the chicken and other things.
- Take 250g yogurt in a bowl.
- In this yogurt, add 1 tablespoon red chili powder, 1 tablespoon salt, 1/4th tablespoon turmeric powder,1 tablespoon vinegar and 1 tablespoon ginger garlic paste respectively.
- Now, do not add any other spices in it and mix it well to make a marinade.
- Now, we have to marinate the chicken using this marinade as the chicken has to be extra soft and tendered for Chicken Reshmi Masala.
- Take one kg chicken and add the already prepared marinade in it and mix it well.
- Cover it with a paper and place it for atleast 2 hours in a refrigerator.
- After 2 hours, take it out of the refrigerator.
- Now, take half cup of oil in a pan and when it is properly heated, add 2 onions in it.
- Please make sure to heat the oil well before adding onions otherwise it will take a longer time to become brown.
- When a golden color starts to appear add two medium sized chopped tomatoes in it and cook it again for few minutes.
- Make sure not to add tomatoes before browning of onions otherwise onions will not become brown.
- Add 15-17 almonds in this mixture of onions, oil and tomatoes.
- Almonds addition is optional and if you don’t have, simply don’t add.
- Now, add 2-3 green chilies properly cut and cook them till they become soft.
- Now, take this mixture out of the pan and blend them in a blender.
- Now, in the remaining oil add 3 black cardamom and 2 green cardamom.
- Now, put the blended mixture again in the pan containing black cardamom and green cardamom.
- Now, cook them till all the water is dried.
- After this, add the marinated chicken into the pan.
- Water is not required here, as the marinade water will be enough to cook the chicken.
- Place the lid over the pan and cook it for 12-13 mints on a low to medium flame.
- After 12-13 mints open the lid and you will see that all the water is dried.
- Now, add 1 table spoon coriander powder, one teaspoon chicken masala and half teaspoon chicken powder (optional).
- Mix all these spices well and cook the chicken well.
- Now, add few pieces of ginger.
- Most important, add 3-4 tablespoon fresh cream into the chicken and mix it well.
- Pour one lemon into the pan and garnish it with green coriander.
- Please do not cook after adding coriander.
- Here you will have the final mouth watering, delicious and spicy look of Reshmi Chicken Masala waiting to tantalize your taste buds.
